Our Gingerbread House!


The Guest House - Gingerbread House!

I love making & decorating the Christmas Gingerbread House. This year I only had to put one together & decorate it. It was already baked and cut ready to go. How convenient is that??? Wow - in 1 hour I had this gorgeous little Gingerbread house put together & decorated.

The Guests will enjoy looking at it - and eating it in the new year!

Enjoy your Christmas Baking. I love baking and have made many scrumptious things this year. I have tried baking outside the box and have made mini Christmas fruit cakes and Butter Tarts as well as 2 different kinds of chocolate bark. I do enjoy baking and this year has been busier than usual.

Light Christmas Fruit Cake


LIGHT CHRISTMAS CAKES DONE & READY FOR PACKAGING


FRUIT AND NUTS SOAKING IN BRANDY!

This year was my first attempt at making a traditional Christmas Fruit Cake. I knew that I wanted a light one and I knew it would need lots of fruit and nuts. I spent days looking at lots of recipes from many different sources. I finally found one I really liked. It was more of an outline than defined recipe which gave me the choice of what I wanted to put in it.
I used mostly the innards of a DUNDEE cake for the fruit and then for nuts I used Pecans and slivered Almonds. I soaked the fruit in Orange flavored Brandy for 2 days (so busy could not get back to it the next day). I bought small muffin tins from the Dollar store. They are about the size of a pound of butter and came in a batch of 5 for $1. I bought 2 sets and used 8 of them.
I did cook the cakes for about 1 & 1/2 hours.
Then I brushed straight brandy on top when done.
They have been sitting for a couple of days. I will wrap them tonight in plastic wrap and then put them in special Christmas bags with name tags as part of the formal table setting for Christmas dinner.

Winter Has Arrived in British Columbia

WINTER HAS ARRIVED IN VANCOUVER
We officially had our first taste of winter today at The Guest House. The snow fell and the wind blew from the North. It was cold outside and even the birds stayed close to home!

Even though winter has arrived - there are so many wonderful things to do locally that the time passes quickly & enjoyably. Dress for it and then there are no surprises or anything to fear!

Christmas Baking at The Guest House

Whipped Shortbread:
This is one of the most favorite Christmas Baking recipes at The Guest House. I thought I would share it with all so for those who cannot join us this year - they can make them at their home. Enjoy and remember we are thinking of you and hope you are enjoying the Holiday Season.
I always do 2 batches
3 Cups Flour
2 Cups Butter
1 Cup Icing Sugar
You will need a stand mixer as you need to whip the ingredients for at least 10 minutes.
1) Add SOFT butter and mix for a minute or two
2) Add Flour & Icing Sugar - Mix start mixer slowly
3) Stop the mixer a couple of times during the mixing process to scrape down the dough from the sides of the bowl
4) The Mixture will be White & Fluffy when done
Drop by teaspoons onto cookie sheet lined with Parchment Paper
Top with either:
1/4 or 1/2 a Maraschino Cherry or
1/2 a Pecan
Sprinkled color sugar
or a combination of two
Bake @ 350' for 17-20 minutes. Make sure you watch them. The cookies should be light brown in color. They can burn fairly quickly. Bake on middle oven rack.
They freeze very well - Lay flat and cover completely to keep out freezer odor.

DELTA HOMESTAY IS ON THE MOVE!



AS OF NOVEMBER 1, 2008 - DELTA HOMESTAY WILL NOW BE: "The Guest House" in Surrey, BC, Canada.

OUR NEW HOME has a HEATED Pool (You can SWIM all YEAR) and covered HOT TUB not to mention 3 LARGE bedrooms. Family sun room & Games room with its own fireplace.

We will be very close to main bus route and a very large HIGH SCHOOL is located 1 block over for any student wishing to finish High school in CANADA.

John & I are extremely excited to welcome new students / guests into our new home. All Bedrooms will be freshly painted w/ new furniture & bedding.

The main bathroom has an amazing SUNKEN TUB for long luxurious baths.

We are looking forward to having our new guests in our new home.

Exciting Summer filled with Guests from Many Countries

Eri (Mom) & Ryo (10) from Japan

What an exciting summer 2008 has already been. First we enjoyed our wonderful students from China (Dani & Kevin) with all their friends. Then we had the pleasure of hosting 2 more boys from Dani & Kevin's class for just 2 short days - (Victor & Travis). We had a couple of days to get organized again when Eri & Ryo joined our family for 2 weeks. Eri was taking English classes at King George International College in Surrey, BC and Ryo was registered for their summer program. 2 Weeks is such a short time for such a long journey. Ryo is one of the most outgoing young boys I have ever met. He rose each & every day around 6am and was excited & happy to be going to school. He met lots of people from around the word and his best friend was a young boy - about his age - from China. They were always together at school. If one arrived earlier in the morning he would always wait for the other. They would run across the parking lot and give each other a huge morning hug. It was like they had been apart for years not hours. What a wonderful experience for them both. Eri took the bus each morning to her English program and also enjoyed it. She told me that she would sit with the other students over lunch to practice their communication - after all if you are from China, South Korea or Mexico the only way to communicate with a Japanese student is English! Both of their English improved greatly.

Unfortunately the 2 weeks flew bye and we had to say goodbye to them. We have been invited to visit them in Japan as well as Dani & Kevin in China. I think John & I will have to plan a 3 month Asian tour for 2012 and visit all our new friends. What an exciting trip to plan. We will also have met so many more students by then also and would love to include them on our trip.

The rain came crashing down - but at the end the rainbow came out!

Sunsets in Vancouver are so Beautiful.

On Saturday July 5, 2008 we all went to the Honeybee Centre in Surrey to take a look around and buy some Honey that they make right on site. It is an amazing place - take a look for yourself. Bob Blummer on his show "Glutton for Punishment" took a visit there too!

After our visit to the Centre we went to a wonderful BBQ. During the BBQ it poured buckets over Vancouver, but at the end the most wonderful rainbow poked its head out of the clouds. The students were amazed and in awe of its beauty. The Sunsets in Vancouver always put a smile on our faces. They are so colourful.

Our Trip to White Rock, BC - June 29, 2008

On one of the hottest days ever recorded in Vancouver, BC we decided to take our Homestay Student (Kevin) to White Rock. He also invited his girlfriend Shirley to join us.


It was so hot that even the water lapping the shore was like a bath. The little fish swam around our feet and Kevin & Shirley gathered shells and went crab hunting. We would have been there for hours, but after a few we all were feeling the heat.


We walked along the shops and stopped for an ice-cream & drinks.


Kevin had wanted to see the Pacific Ocean and it was our Pleasure taking him there. Our other student Deni had decided he wanted to go to Stanley Park with a group of his school buddies. He also had an amazing day. He was surprised to see all the wild animals wandering around and he also dipped his toes into the Pacific Ocean.

A Tourist in Your Own City - Great Fun



A TOURIST IN YOUR OWN CITY:
When the students have a day off from School, I really enjoy taking them around and showing them what Vancouver has to offer. Their School usually takes them on amazing day trips once a week so I take them to different locations.
On this very hot sunny day - we drove to the King George Sky-Train station and took the sky-train all the way downtown. Once downtown we hopped on the SEA BUS and sailed across the Vancouver Harbour to North Vancouver - Lonsdale Quay. We had lunch in the Quay and walked around for an hour. There was a show on too and they boys really enjoyed watching it. After the show we stopped for Ice-cream before I trek home.
On the way home - Bill fell asleep on the Sky-Train. He was just worn out from the excursion. Vancouver has so many wonderful places of interest there is always something to do and show our students.
